WHere is a home-style take on a beverage featured on a new cocktail list. Designed as a batch pre-mixed that's bursting full of tastes of a Christmas time, making it perfect for a festive gathering. Any leftover cordial for brunch beverages, sweets, or to make more rounds of the drink.

Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place every ingredients in a pot, heat until it reaches a light boil, mixing to dissolve. Then, remove from the heat and leave to cool down completely. Transfer into a sterilised bottle, seal keeping it in the refrigerator, it will last for up to four weeks.
To make Premix: Mix all the liquid ingredients into a big jug, allow it to infuse for one hour, then pass it through preferably using muslin, to ensure it's fully clarified.
For serving: Measure 85ml of the batch mix to a cocktail shaker packed with ice, and stir carefully for about 60 seconds until cold. Filter to a cold coupe glass or equivalent, decorate with some cranberries adding the final touch with a quick spritz with the mandarin essence over the top.
